Ellen’s vegetarian entrees

One day during the cross country season I came home, exhausted from a hard workout. Because I am a vegetarian in a family of carnivores, I have to make my own meals, which can make tiring days especially hard.
Thankfully, on that particular day my mom, bless her, decided to make pasta for dinner. Upon arriving home, she announced that we were having this peanut pasta thing. I had never heard of such a thing, but I decided to try it. It was unbelievably good, and everyone should have the chance to taste it.
Recipe #1: Easy Peanut Pasta
Ingredients:
-8 ounces of pasta, any kind (I prefer regular spaghetti noodles)
-1/2 cup smooth peanut butter
-1/4 cup of warm water
-2 tablespoons Tamari sauce
-1 tablespoon lemon juice
-1 tablespoon orange juice concentrate
-1/4 teaspoon cayenne pepper (or more, if you prefer spicy foods)
-1/2 teaspoon garlic powder
-1/4 cup thawed green peas
-1 finely sliced scallion, both white and green parts (optional)
-1/4 cup grated carrot (also optional)
1. Cook pasta according to package directions.
2. While the pasta cooks, combine peanut butter, Tamari sauce, lemon juice, orange juice concentrate, warm water, cayenne pepper, and garlic powder in a blender. Blend until smooth and set aside.
3. About one minute before the pasta finishes cooking, add the peas. Wait until the water comes back to a boil, and cook for one more minute. Once done, drain the pasta and peas.
4. Take the blended sauce and mix with the pasta. Mix in optional scallion and grated carrots if you want.
5. Eat a delicious and easy pasta dish! Can serve up to four hungry people.
