Jack's Desserts: Fire of Love

As Valentine’s Day arrives, ideas for men’s gifts can be hard to find, but you can never go wrong with food.  “The way to a man’s heart is through his stomach.”  A simple but delicious dessert is a chocolate volcano, hence the name “Fire of Love.”
I first tasted this treat while going to my mom’s friend’s house.  Ever since, I recognize her only as “the volcano lady.”  This dessert got it’s name after the molten chocolate inside the treat.  When cutting into the volcano for the first time, the molten chocolate inside comes flowing out like a chocolate river we all wish we owned.
To counter the heat of the desert, a scoop of ice cream or dollop of whip cream does the trick.  Happy Valentine’s Day and good luck!
Ingredients:
8 squares of Baker’s semi-sweet baking chocolate
1 cup butter
2 cups powdered sugar
4 eggs
4 additional egg yolks
12 TBLS (3/4 cup) flour
Ice cream or whipped cream or both!
Steps:
1)  Preheat oven 425
2)  Butter 8 (3/4 cup) custard cups
3)  Microwave chocolate and butter for 30 sec. intervals until both are melted.  Stir with a whisk in between intervals.
4)  Stir in sugar, eggs and egg yolks, and finally flour to the choco/butter concoction.
5)  Pour concoction into 8 custard cups evenly.
6)  Cook for 13 minutes or until sides are firm.  Don’t overcook.  You want the middle to be very molten.  (Don’t cook until ready to serve)
7)  Let cool for 1 minute then slide a knife around the outside of the cups.  Then flip the cup over onto plate to serve the volcanoes upside down.
8)  Serve with ice cream or whipped cream.
